Thai cooking is some of the most popular in the world. The emphasis is on lightly prepared dishes with strong aromatic components and a spicy edge. It is characterised by a harmonious balance of four or five fundamental tastes in each dish or the overall meal: sour, sweet, salty, bitter, and spicy. We will introduce you to a variety of Thai dishes, some of the more unusual ingredients and where to source them.
