The Ingredients

1 medium swede

1 medium butternut squash

4 medium parsnips

150ml/ ΒΌ pt double cream

55g/2oz butter

salt and pepper

The Method
        1. Peel and dice all the vegetables into 2cm/1" cubes.
        2. Cook the swede in boiling salted water until soft, drain well.
        3. In a separate pan cook the butternut squash and parsnip together in boiling salted water until tender, drain well.
        4. Roughly mash with cream, butter, salt and pepper.
