swede, pasrnip and butternut squash mash
A root veg mash medley.
1 medium swede
1 medium butternut squash
4 medium parsnips
150ml/ ¼ pt double cream
salt and pepper
- Peel and dice all the vegetables into 2cm/1” cubes.
- Cook the swede in boiling salted water until soft, drain well.
- In a separate pan cook the butternut squash and parsnip together in boiling salted water until tender, drain well.
- Roughly mash with cream, butter, salt and pepper.
