A classic potato dish, a close relation to Pomme Dauphonsie.
The Ingredients
340g Wilja potatoes, peeled and thinly sliced
30g butter
Salt and freshly ground black pepper
Freshly grated nutmeg

The Method
  1. 1. Clarify the butter by melting it in a heavy saucepan, skim off the froth and then pour the clear butter into a bowl leaving behind the white solids.
    2. Preheat the oven to 200ºc/gas mark 6.
    3. Brush a heavy non-stick ovenproof frying pan with the clarified butter.
    4. Arrange a neat layer of overlapping potato slices on the base of the pan, brush with butter and season well with salt, pepper and nutmeg.
    5. Repeat this process until all the potatoes have been used.
    6. Put the pan over a direct medium heat for 5 minutes or so until the bottom layer of potatoes is lightly browned.
    7. Remove from the heat and cover with greased foil.
    8. Bake for 45 minutes or until the potatoes are tender.
    9. Invert a serving plate over the pan and turn the potatoes out, cut into wedges and serve.
