Cranachan is a traditional Scottish dessert. It was originally a celebration of harvest, made following the raspberry harvest in June. The dessert of cream and fresh seasonal raspberries is bolstered by Scottish oats and whisky. It has been called 'the uncontested king of Scottish dessert.

The Ingredients
570ml Double Cream
85g Porridge Oats
7tbsp Whisky
3tbsp Honey
450g Raspberries

The Method
  1. Toast the oats in a dry frying pan, being very careful not to burn them.
  2. Lightly whip the cream until it reaches soft peak, then fold in the whisky, honey, raspberries and cooled oatmeal.
  3. Serve in glass dishes and garnish with a few raspberries and mint.
