Grace Berringer, Aged 11 from Basingstoke is our winner for her Easter Recipe 

Grace wrote: this is our favourite family Easter recipe as it uses eggs and it Easter is the time we start to look forward to the icecream van starting to visit again after the long winter.

Pack of flat based ice cream cones
250g unsalted butter
250g caster sugar
350g Self Raising flour
4 eggs lightly beaten
Grated zest of 2 large oranges but 75ml orange juice
  • Heat oven to gas mark 3.
  • Place ice cream cones on a baking sheet.
  • Make the cake batter by creaming butter sugar & zest until pale light & fluffy. 
  • Add eggs gradually, adding small amounts of flour In-between. 
  • Finally add the rest of the flour and then slowly mix in the orange juice.
  • Divide the mixture between the cones, filling them approximately half full then bake for approx 15 mins.
  • Once cooked and cooled, make a batch of buttercream icing and pipe onto the cakes in an icecream style. Finish off with sprinkles and chocolate flake.
